Yellow Ogi with Veggie Omelet & Fried Plantains (Dodo)

Ingredients
- • 5 tablespoons Poshy Yellow Ogi flour
- • 1/2 cup cold water (slurry)
- • 1.5 cups boiling water
- • Sugar or milk (optional)
- • 2 eggs
- • 2 tbsp chopped onions
- • 1 tbsp diced bell peppers
- • Pinch of salt and black pepper
- • 1 tbsp oil
- • 1 ripe plantain
- • Pinch of salt (optional)
- • Oil for frying
Instructions
- 1 Make the Ogi: In a bowl, mix Poshy Yellow Ogi flour with cold water until smooth.
- 2 Boil 1.5 cups of water and slowly pour it into the slurry while stirring constantly.
- 3 Stir until it thickens into a pudding-like texture. Cover and steam for 3–5 minutes.
- 4 Fry the Omelet: In a bowl, whisk eggs with onions, peppers, salt, and pepper.
- 5 Heat oil in a pan, pour in the mixture, and fry on both sides until fluffy and golden.
- 6 Fry the Plantains: Peel and slice the ripe plantain diagonally.
- 7 Heat oil in a frying pan, and fry until golden brown. Drain on paper towels.
- 8 Serve It All: Scoop Ogi into a bowl, serve with warm omelet slices and fried plantains.
- 9 Enjoy with a smile - it's home on a plate.
